Serve this crispy romaine lettuce salad as a low-calorie way to up the vitamin content of any meal.
Kirby (pickling) cucumber
large head romaine lettuce
red wine vinegar
small clove garlic
salt and pepper
- Cut unpeeled cucumber lengthwise in half, then crosswise into paper-thin half-moons. Coarsely slice lettuce. In large serving bowl, place cucumber and lettuce. With vegetable peeler, shave carrots directly into bowl with lettuce.
- In small bowl, whisk together mayonnaise, vinegar, garlic, tarragon, 1/4 teaspoon salt, and 1/4 teaspoon coarsely ground black pepper. Add to bowl with lettuce and vegetables; toss to coat.
