Matzo-Crusted Salmon with Glazed Radicchio

Upgrade salmon — ever the dinner staple — with matzo breadcrumbs and maple syrup, hot sauce and brown-sugar glazed radicchio.

Ingredients
3 tbsp. brown sugar
3 tbsp. Hot sauce
3 tbsp. maple syrup
3 tbsp. olive oil
4 salmon fillets (5 oz. each)
2 medium heads radicchio, cut into 8 wedges
1 sheet matzo, broken up
3 tbsp. Chopped parsley
1/4 c. golden raisins
1/4 c. walnuts, chopped
Directions
  1. Whisk brown sugar, hot sauce, maple syrup and olive oil until smooth. Arrange salmon fillets and radicchio on large rimmed baking sheet lined with foil; brush all over with maple syrup mixture. Sprinkle 1/2 teaspoon salt on salmon and radicchio.
  2. In food processor, pulse matzo until finely crushed; pulse in chopped parsley and 1 tablespoon olive oil. Pat crumbs onto salmon to make them adhere. Bake at 450°F 12 to 15 minutes or until salmon is cooked through. Top radicchio with golden raisins and walnuts.
