Upgrade salmon — ever the dinner staple — with matzo breadcrumbs and maple syrup, hot sauce and brown-sugar glazed radicchio.
salmon fillets (5 oz. each)
medium heads radicchio, cut into 8 wedges
sheet matzo, broken up
- Whisk brown
sugar, hot sauce, maple
syrup and olive oil until
smooth. Arrange salmon fillets and radicchio on large rimmed baking sheet lined
with foil; brush all over
with maple syrup mixture.
Sprinkle 1/2 teaspoon salt on
salmon and radicchio.
- In food processor, pulse
matzo until finely crushed; pulse
in chopped parsley
and 1 tablespoon olive oil. Pat
crumbs onto salmon to
make them adhere. Bake at
450°F 12 to 15 minutes or until
salmon is cooked through.
